Cake with benefits
Who doesn’t love cake?
This Malt loaf is a homemade version of Soreen and it is delicious, nutritious, comforting, filling and full of all the good things and really good with a good spread of butter of choice. My postnatal client love it!
So make it for yourself or better a someone else to make it for you :))
1 black tea bag, 150ml boiled water, 200g sultanas, 100g pitted prunes chopped, ½ tsp bicarbonate of soda, 150g malt extract, 40g black treacle, 50g molasses, 50g dark muscovado sugar, 250g plain flour, 1tsp baking powder, 2 eggs beaten.
I loaf tin, greaseproof paper.
Preheat oven to 150 (fan) or 170
Grease tin and line with greaseproof paper.Place tea bag in 150ml water brew 5 minutes remove bag and add sultanas and prunes and soak 20 mins
Pour malt, molasses, treacle, sugar in small pan over low heat and stir until sugar dissolves (2-3mins) and then cool Sift flour, baking powder and bicarbonate of soda into a big bowl, make a well and pour in the cooled malt mixture and soaked fruit and liquid.
Fold everything in together and then add beaten eggs and mix well. Pour mixture in tin and bake in the oven for 1 - 1 ¼ hours, until a skewer comes out clean. When ready, leave in the tin to cool.
Turn out, slice and enjoy with butter of choice.
